How to Make Jamaican Red Beans and Rice Soup, Step-by-Step
Step 1: Gather and prepare all ingredients.
Step 2: In a large saucepan over medium heat, cook onion and bacon for 2-3 minutes. Stir frequently to prevent burning.
Step 3: While onion and bacon cooks, microwave chicken broth in a microwave-safe bowl for 2 minutes on HIGH power.
Step 4: Pour hot broth and Jamaican jerk seasoning over onion and bacon mixture. Add beans to saucepan and gently mash with back of a spoon, just so the skins are broken.
Step 5: Give the mixture a stir, cover saucepan and bring to a boil over high heat.
Step 6: Lower the heat, uncover saucepan and allow to simmer for 5 minutes.
Step 7: Stir in brown rice, cover saucepan and simmer for 5 minutes.
Step 8: Serve soup hot, sprinkled with chopped cilantro.
Step 9: Store any leftover soup in an airtight container in the refrigerator.
What is Jamaican Jerk Seasoning? I used McCormick Gourmet brand that was made up of the following blend of ingredients: sea salt, spices (including thyme, red pepper, allspice) and sugar. It is often described as being a combination of sweet, smoky, fiery and fruity.
Enjoy this hearty and filling soup plain or with a dusting of fresh chopped cilantro. It would also pair well with a simple arugula salad and cornbread or Paula Deen’s Corn Casserole.
Ways to Use Leftovers
Make this soup ahead for quick gran-and-go lunches. After the soup is made, portion into individual containers with airtight lids and keep in the refrigerator for quick meals. Chop the cilantro and store in individual baggies with the soup containers.
