2 tablespoons peanut butter powder
1-½ tablespoons unsweetened dark cocoa powder
2 packets Truvia zero calorie sweetener
½ teaspoon baking powder
2 tablespoons liquid egg whites (about 1 large egg)
2 tablespoons unsweetened almond milk
¼ teaspoon vanilla
How to Make Flourless Chocolate Mug Cake, Step-by-Step
Step 1: Gather and prepare all ingredients.
Step 2: In a small mixing bowl, whisk together peanut butter powder, cocoa powder, zero calorie sweetener and baking powder.
Step 3: Stir in egg substitute, unsweetened almond milk and vanilla until dry ingredients are completely absorbed and mixture is thoroughly combined.
Step 4: Lightly spray a microwave-safe mug or ramekin (about 8-10 ounces) with nonstick cooking spray. Pour or spoon mixture into prepared mug or ramekin.
Step 5: Microwave on HIGH for 45 seconds, then check to see if cake is set and lightly springs back when touched. If not set, cook in 15 second increments until done.
Step 6: Enjoy cake directly in the mug or remove to a small plate. Top with fresh berries, lite whipped topping and/or sprinkles if desired.

Be careful not to overcook this mug cake. If you do it will turn out dry and flavorless. The first time I followed the original instructions for this chocolate mug cake recipe which said to cook the cake in the microwave for 1-½ minutes on HIGH. I followed this instruction and my cake turned out very dry and tasteless. Cooking times for microwaves can be tricky due to their size and power ratings (wattage). This is why it is better to start off cooking for less time and checking it more frequently, so you won’t end up with a dried out cake.
Make sure to use a microwave-safe mug or ramekin that is large enough to allow room for the batter to expand while cooking.
Air-Fryer Gluten Free Chocolate Mug Cake: I also cooked this single serving cake in my Cosori TurboBlaze™ air fryer. On my Cosori, I used the “Bake” function for 10 minutes at 350F degrees and it turned out perfectly. I also checked on it after 5 minutes, just to make sure I wasn’t overcooking it.
You could also mix this directly in the mug, but I found this to be a little too difficult for getting all the ingredients thoroughly mixed, so I opted to first mix the ingredients in a small bowl.then pour them into the lightly greased ramekin or coffee mug.
Variations & Substitutions
No peanut flour? Use almond flour instead. Both have similar nutty profiles and work well in similar recipes.
No dark cocoa powder? Any unsweetened cocoa powder will work.
No Eggs? Substitute the same amount of unsweetened applesauce.
No Unsweetened almond milk? Any dairy or non-dairy milk will work: coconut milk beverage, soy milk, hemp milk, non-fat dairy milk, oat milk, etc.
Possible additions? A teaspoon or two of chocolate chips, a pinch of espresso powder, a pinch of cinnamon would all be delicious.
