Weight Watchers Recipe of The Day: 2-Ingredient Soda Cake

Dessert doesn’t get much easier than this 2-Ingredient Weight Watchers Soda Cake, which turned out better than I expected. It calls for a box of cake mix and club soda or sparkling water. 

Weight Watchers 2-Ingredient Club Soda Cake

I first learned of Diet Soda Cake years ago at a Weight Watchers meeting. I’ve even used the recipe to make delicious guiltless 2-ingredient cupcakes

But I have to be careful because the artificial sweetener in diet soda can sometimes give me a headache. 

So when I heard about using club soda or sparkling water instead of diet soda and thought I’d give it a try.

I like to use Betty Crocker cupcake mix when baking cakes. They make one little layer instead of two. (I know from experience when it comes to trying to stay happy, healthy and slim, little cakes are a safer, better bet than big ones, which is why I’m also such a fan of 3-2-1 Microwave mug cake.)

If you can’t find the cupcake mix you could always use just half of a regular 2-layer cake mix instead to make 1 small cake. Or use the full cake mix and 12 ounces (1-⅓ cups) of club soda or seltzer to a make 2 small cakes or one large cake in a 9×13-inch pan. 

I also added a teaspoon of vanilla for good measure. Then spread the finished cooled cake with the thinnest possible layer of chocolate frosting.

This Weight Watchers club soda cake turned out sweet, moist and fluffy with a tender crumb. We didn’t miss the eggs or oil a bit. But without the binding power of eggs, this cake does tend to be a bit crumbly.

I frosted my cake with the thinnest possible layer of chocolate frosting. If you’re not a fan of frosting you could sprinkle on a little confectioner’s sugar instead and save yourself *2 SmartPoints in the process.

Ingredients for Weight Watchers Soda Cake

Ingredients for 1 Small Cake

½ box cake mix
⅔ cup of diet soda, soda, club soda, or sparkling water

Ingredients for 1 large or 2 Small cakes

1 box cake mix
1 can (12 ounces) diet soda, soda, club soda or sparkling water

How to Make Weight Watchers Soda Cake?

Step 1: Check out the instructions on the box

Follow the directions on the box mix to preheat your oven to the proper temperature. Then, grease a cake pan with cooking spray or line muffin cups with paper liners if you want to make cupcakes.

Step 2: Make the batter

In a large mixing bowl, beat together the cake mix and soda for two minutes, either by hand or with an electric mixer.

Step 3: Bake the cake(s)

Pour the batter into the cake pan(s) or divide the batter evenly among the cupcake cups. Follow the directions on the box mix for cooking times.

Step 4: Decorate

Once the cake is cool, decorate with your favorite frosting or icing. (Or, your favorite canned frosting.) To keep calories and points low, dust with a bit of confectioners sugar. Some Weight Watchers program members like to mix cool whip and sugar free instant pudding for a light and fluffy frosting. 

What Flavors Work Best to Make Weight Watchers Soda Cake?

I liked the flavor of plain yellow cake mix and plain club soda. But the options are really endless if you want to get creative with flavor combinations of cake mix and sparkling water or diet soda. The flavor of the soda or sparkling water will be stronger when you use a vanilla or yellow cake. The soda flavor is more subtle in a stronger-flavored cake such as chocolate or spice. Here are a few suggestions to get your creative juices flowing:

Chocolate cake mix + diet cola
Chocolate cake mix + diet root beer
Devil’s food cake mix + diet cherry cola
Lemon cake + lemon-lime sparkling water or soda
Spice cake + ginger ale or ginger beer

Weight Watchers Club Soda Cake Recipe

Ingredients

1 package (8.9 ounces) Betty Crocker yellow cupcake mix (or ½ a regular size cake mix)¾ cup club soda or diet soda1 teaspoon vanilla (optional)¼ cup favorite icing

Instructions

Preheat oven to 350F degrees.
Grease an 8-inch round pan with nonstick spray.
In a bowl, whisk together the cake mix, club soda and vanilla until well blended.
Scrape batter into the prepared baking pan.
Place in the center of the oven and bake until a thin knife inserted into the center comes out clean, about 25 to 35 minutes.
Remove from the oven and place on a wire rack to cool.
When cool, remove from the pan and spread with a very thin coating of your favorite frosting.

Notes

For a regular size cake mix, use 12 ounces (1-½ cups) of sparkling water, club soda or diet soda. Bake in 2 8-inch round cake pans or 1 9×13-inch pan. Bake according to time recommended on the box of cake mix.
