How to Make Chocolate Chip Kodiak Quick Cake Step-by-Step
Step 1: Gather and prepare all ingredients.
Step 2: Preheat oven to 350F degrees and lightly spray an 8-inch square baking pan with non-stick spray. Alternatively, line baking pan with parchment paper and lightly spray with non-stick spray. The parchment acts as a sling making it easier to lift the entire cake from the pan.
Step 3: Whisk together the Kodiak mix, sweetener and chocolate chips in a large mixing bowl.
Step 4: Stir in milk, beaten egg, oil, vanilla and coconut extract just until combined and all dry ingredients have been absorbed.
Step 5: Spoon or pour batter into prepared pan. Sprinkle chopped walnuts evenly over the top.
Step 6: Bake until a toothpick inserted in the center comes out clean, about 12 to 15 minutes. Allow to cool in pan for 5 minutes before removing to wire rack to cool completely.
Step 7: Cut in 12 equal pieces. If desired, dust with powdered sugar before serving.
Step 8: Store any leftover cake in an airtight container.
Recipe Notes
If you can’t find Kodiak Cakes Mix, you can substitute any reduced-fat baking mix, such as Heart Smart Bisquick, or homemade Bisquick substitute.
