My Meal Plan on Weight Watchers This Week

What Do I Eat for Breakfast on Weight Watchers?
Most days my breakfast is something quick like an english muffin with almond butter, avocado toast, cottage cheese with fruit, eggs, yogurt with fruit, oatmeal or a smoothie, depending on my mood and the season. I’ve also been adding a fresh juice to my morning routine on a regular basis.

After years of doing this my approach is pretty casual. I stick a post-it note with a list of the recipes I’m planning to make stuck to the fridge. That’s it. No charts. No graphs. No calendars. It’s what works best for me at this age and stage of life. For me simple works best 🙂 Since this is Thanksgiving week I’m including recipes featuring turkey leftovers.
Skinny Easy Artichoke Soup – Since it has a short list of ingredients, mostly coming from the pantry, it is the perfect soup to make when you want something quick and easy. Although it’s made mostly from canned ingredients, this tastes SO much better than any soup from a can or a box.Try it. Everyone will think you spent hours in the kitchen to prepare this simple sensational soup. I’ll plan to serve this soup with a toasted light English muffin or wholegrain toast.
WW Greek Frittata with Spinach & Feta – Simple and delicious vegetarian, gluten free option for breakfast, lunch or dinner. Just 4 Weight Watchers SmartPoints per serving. I’ll plan to serve it with this Simple Arugula Salad.
Spicy Turkey, Spinach Apple Panini (made with leftover turkey) – What’s not to like about thinly sliced apples, smoked turkey, spinach and cheddar layered between spicy mayo smeared multigrain bread and grilled until toasty and melty?Instead of smoked turkey I will use leftover Thanksgiving turkey in this panini sandwich.
Slow Cooker Turkey and Wild Rice Casserole – An easy delicious way to use leftover Thanksgiving turkey. It was a big hit with my casserole-loving husband. If you love creamy comforting casseroles this recipe is for you. I’ll plan to serve it with roasted or steamed green vegetable such as green beans, broccoli or peas.
Turkey Noodle Soup – A simple low calorie recipe for leftover turkey noodle soup with several delicious variations. Of course, you can always use chicken instead.

I can’t tell you how thrilled we were with your menu posted this week! We are on vacation and in a condo for five weeks. Keeping meals simple.
