Getting dinner on the table is so much easier when you’ve planned what you’re cooking and eating ahead of time and done the grocery shopping. It’s the only thing that prevents me from resorting to fast food or takeout more often than I should.
Every time I get out of the meal planning habit and resort to take-out, restaurants, and snacking on junk, it’s amazing how crappy I feel and how quickly the pounds pack on.
The Key to Eating Well is Cooking
When you’re trying to eat well, not cooking isn’t an option. At least for me anyway. There are just too many unknowns (hidden sugar, flour, fats, chemicals, points), too many temptations, and portions are way too large for you to routinely eat well on take-out or pre-made food.

This easy crock pot corn chowder is the kind of WW friendly recipe that makes me very, very happy for several reasons. It’s easy to make with the most basic of pantry ingredients. It manages to be rich, creamy and delicious and good for you while being very low in fat. And it reminds me of the corn chowder my mom made when I was growing up. I’ll serve it with a simple green salad and light wholegrain toast.

Spanish Tortilla with Peas and Mint
This Spanish tortilla is essentially an open-faced omelet—much more closely related to the Italian frittata—than the Mexican corn- or flour-based tortilla, which we in the U.S. associate with as wraps for burritos. It’s often served at room temperature. I love how easy it is for breakfast, lunch or dinner.
I’m also planning to make a batch of these delicious breakfast bars, which I will share with family/friends to prevent going overboard! They’re a favorite sweet treat.
