Slow Cooker Greek Chicken with Feta and Tomatoes

I’m excited to share one of the best recipes for crockpot chicken breasts I’ve made in a while. Oregano, black olives, and feta cheese provide wonderful Greek flavor in this super simple slow cooker recipe the whole family will love. Tender chicken in a light yet flavorful sauce. What’s not to like?

It’s such a thrill to discover new recipes like this slow cooker meal that is simple enough for a busy night yet delicious enough to serve to guests. Low in fat, calories and carbs, this tasty healthy meal is perfect for Weight Watchers too.

According to my calculations, each serving (about 4 ounces of cooked chicken and ½ cup sauce) has 170 calories.

How to Make Slow Cooker Greek Chicken with Feta and Tomatoes

Step1: Gather and Prep your ingredients:

4 pounds bone-in chicken breasts, legs and or thighs (skinned) (I used all breasts)
Salt and freshly ground black pepper
2 garlic cloves, finely chopped
½ teaspoon dried oregano
1 pinch cherry tomatoes or grape tomatoes, sliced in half
½ cup chicken broth (I substituted Greek Italian Dressing because I didn’t have broth)
½ cup chopped pitted kalamta olives
½ cup crumbled feta cheese

Step 2: Remove chicken skin with paper towel to get a grip on it since it can be very slippery. Season chicken and place in the slow cooker. Top with garlic, oregano, tomatoes and broth.

Step 3: Cover and cook on low until the chicken is tender, about 4-6 hours. (Mine was done in 4 hours)

Step 4: Top with the crumbled feta cheese and olives. Cover and cook another 15 to 30 minutes, until hot.

Recipe Notes, Variations and Substitutions

I used Greek dressing in place of the half cup of chicken broth because it is what I had available.
The recipe calls for Kalamata olives but substitute whatever green olives or black olives you prefer.
Italian seasoning would be a nice substitution for dried oregano.
Granulated garlic works well in place of cloves garlic.
I used skinless bone-in chicken breasts. Bone-in chicken thighs, chicken legs or even boneless skinless thighs would also work. If you use boneless skinless chicken breast halves I’d shorten the cooking time to 3-4 hours or maybe even less.
I used crumbled feta cheese but a block of feta cheese (crumbled of course), parmesan cheese or goat cheese would also be delicious.
I used sliced fresh grape tomatoes. Sun-dried tomatoes would also work
I wouldn’t suggest cooking this great recipe for chicken on high heat. LOW is the way to go when cooking chicken in the crock-pot.

Can you Overcook Chicken in a CrockPot?

Yes, you can overcook chicken in the crockpot. Today’s slow cookers cook hotter and faster than their vintage cousins. The only way to cook tender chicken (and turkey) in a slow cooker is on the LOW setting and for a relatively short period of time. Slow cooker chicken dinners are perfect for days when you want dinner ready in just a few hours.

It’s best to start checking chicken breasts at the low end of the time range. Chicken thighs are much more forgiving than chicken breasts because their dark meat becomes meltingly tender during the long slow cooking time. Longer cooking times are also needed for chicken soups and casseroles where the meat is insulated by other ingredients.

Another important consideration is crockpot size. Crockpots are designed to be ½ – ¾ full for best results. Many people use a crockpot that is far too big for the recipe they are making. This can result in tough, rubbery, dry, overdone chicken.

Compare this to baking brownies, if the recipes calls for an 8×8 inch baking pan but you only have a 9×13 inch baking pan, you’ll need to adjust the cooking time as the extra surface space will cause the brownies to cook much more quickly than instructed.

This is the same with slow cookers. If the recipe calls for a 3-quart slow cooker but is cooked in a 6-quart slow cooker, you’ll need to adjust for the extra surface space or the meal may become overcooked.

If you only have a large slow cooker, another alternative is to place the ingredients in an oven safe dish inside the slow cooker. I often do this when making slow cooker dips and desserts

Serving Suggestions

Serve this with orzo tossed with the pan juices and a leafy green vegetable such as fresh spinach. Other tasty accompaniments to this healthy dish include:

Brown rice or white rice
Spaghetti or other pasta
Cauliflower rice

Ways to Use Leftover Cooked Chicken with Leftover Sauce

We were happy to eat this flavorful tender chicken dish two days in a row. Just store the cooked chicken with it’s flavorful sauce in an airtight container in the refrigerator for 3-4 days. You could also portion out your leftovers and freeze in airtight containers for future easy healthy meals.

Ingredients

Instructions

Ideal Slow Cooker Size: 4- to 6-quart. I used my 4-quart
Spray the insert of the slow cooer with nonstick cooking spray.
Season chicken with salt and pepper to taste.
Place the seasoned chicken pieces in the slow cooker, overlapping slightly.
Sprinkle the chopped garlic and oregano over the top. Add the sliced tomatoes and broth.
Cover and cook on low for 4-6 hours, or until the chicken is very tender when pierced with a fork.
Add the olives and cheese. Cover and cook on low for 15 – 30 minutes longer, or until hot. Serve hot.
