Simple Creamy Peach Salad

This light and refreshing peach salad boasts a delightful combination of juicy diced peaches, crunchy chopped celery, and nutty chopped or slivered almonds in a simple plain honey-yogurt based dressing. It was the perfect way to use the slightly wrinkle-skinned peaches I found languishing in the fridge. It’s an interesting alternative to my favorite Skinny Waldorf Salad perfect for summer.

The Health Benefits of Peaches

Peaches are not only delicious but also offer several health benefits, something I’m focusing on more now than ever before:

Nutrient-Rich: Peaches are a good source of essential nutrients such as vitamins A and C, which are potent antioxidants that help protect cells from damage, boost the immune system, and support healthy skin.
Fiber: They are a decent source of dietary fiber, particularly in the skin, which aids in digestion, helps regulate blood sugar levels, and contributes to a feeling of fullness, which can assist in weight management.
Low in Calories: Peaches are relatively low in calories, making them a healthy choice for those looking to manage their weight or reduce calorie intake.
Antioxidants: Peaches contain various antioxidants, including phenolic compounds and beta-carotene, which may help reduce the risk of chronic diseases by combating oxidative stress and inflammation.
Eye Health: The vitamin A in peaches is essential for good vision and may help reduce the risk of age-related macular degeneration.
Skin Health: The vitamin C and antioxidants in peaches can promote collagen production, which is crucial for maintaining healthy skin and reducing signs of aging.
Heart Health: The fiber, potassium, and antioxidants in peaches can contribute to heart health by helping to lower blood pressure, reduce cholesterol levels, and support overall cardiovascular function.
Weight Management: The fiber and low-calorie content of peaches can help with weight management by promoting a feeling of fullness and reducing calorie consumption.
Digestive Health: The fiber in peaches aids in regular bowel movements and can help prevent constipation.
Hydration: Peaches have a high water content, which can help keep you hydrated, especially during hot weather.

No almonds? Walnuts or pecans would also work
