Parmesan Broiled Tomatoes
Fresh Roma tomatoes, halved and tossed with olive oil, fresh thyme, salt and pepper. After broiling, you just sprinkle the tomatoes with some grates parmesan and fresh chopped basil. You’ve got a delicious side dish that pairs well with anything from fish to chicken to pork or beef.
We recently had these Parmesan and herb Broiled Tomatoes alongside homemade grilled turkey burgers. They would also make a wonderful accompaniment to scrambled eggs or omelettes for brunch, or breakfast-for-dinner.

How to Make Parmesan Broiled Tomatoes, Step- by-Step
Step 1: Gather and prepare all ingredients.
Step 2: Preheat broiler lightly spray a broiler pan (or broiler rack) with nonstick spray.
Step 3: In a large bowl, add the tomatoes, thyme, oil, salt and pepper and toss to coat.
Step 4: Place the tomatoes, cut side up, on prepared pan.
Broil (about 6 inches from heat) until tomatoes soften and begin to char slightly, about 10 – 12 minutes.
Step 5: Arrange tomatoes on a large plater and sprinkle with Parmesan cheese and chopped basil.
Step 6: Serve hot, warm or at room temperature.
Step 7: Store any leftovers in an airtight container in the refrigerator.
Recipe Notes
If you don’t have fresh herbs, you can toss the tomatoes with 1 teaspoon dried thyme and 1 teaspoon of dried basil before broiling. The flavor won’t be the same, but the tomatoes will still be delicious.
Serving Suggestions
Enjoy these broiled tomatoes with chicken, steak, pork, fish or burgers from the grill. They also pair well at breakfast or brunch with omelettes or scrambled eggs.
Ways to Use Leftovers
Store any leftover tomatoes in an airtight container in the refrigerator. To reheat, pre-heat oven (or toaster oven) to 350F degrees and place tomatoes in an oven-safe dish and warm until heated through, about 10 minutes. Broiled tomatoes can be enjoyed hot from the broiler, warm or at room temperature.
