1 medium head cabbage, red or green (about 2 pounds)
2 tablespoons olive oil
6 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
1 pinch black pepper

How to Make Air Fryer Parmesan Roasted Cabbage Wedges

Step 1: Gather and prepare all ingredients.

Step 2: Use the Preheat function to heat the air fryer to 350F degrees. (The air fryer model I used was the Cosori TurboBlaze™ with the crisper plate.)

Step 3: Cut your cabbage in half lengthwise, and then cut each half into 4 wedges. By keeping the core intact, the wedges should hold together relatively well.

Step 4: In a small bowl, stir together the Parmesan cheese, garlic powder, onion powder, salt and pepper.

Step 5: Lightly spray, or brush, oil on all sides of cabbage wedges. Sprinkle the Parmesan-spice mixture over the wedges, gently pressing between the leaves and it into crevices, helping it stick.

Step 4: Place the wedges in the bottom of the air fryer basket on crisper plate and arrange in a single layer, spice-side up.

Press the Air Fry button and cook at 350F degrees for 20-25 minutes, until wedges are tender and lightly charred on the outside. Be sure to check after about 10 minutes, as cooking times for different air fryers may vary. (Depending on size of your air fryer, you may need to cook in batches. Buttons and cooking functions on your specific model may be different.)

Step 5: Add roasted cabbage wedges to a serving dish or divide evenly between 8 plates.

Recipe Notes, Substitutions & Variations

I really enjoyed this new way of preparing cabbage. I think the green cabbage wedges turned out a little more tender and sweeter than the red. Both were delicious! The red cabbage wedges had a more earthy taste with a bit more crunchy crispy texture. If you prefer more tender cabbage your cooking time may need to be increased. Next time I may experiment with other cruciferous vegetable, such as brussels sprouts, and alternative seasonings.

No Parmesan? Asiago or Pecorino Romano would be great substitutes. Nutritional yeast has a cheesy, nutty flavor and a texture similar to grated Parmesan. It’s a great way to keep this healthy veggie vegan friendly.

Other Seasonings? You can take this simple roast cabbage in lots of different directions. Smoked paprika, garlic powder & paprika, Italian seasoning, lemon pepper, cajun seasoning, curry powder, chili powder, soy sauce & sesame oil would all be delicious alternatives to the suggested herbs and spices.

Brighter? A drizzle of balsamic vinegar, splash of sherry vinegar or squeeze of fresh lemon juice atop your cooked cabbage pieces would be delicious way to kick this healthy vegetable side dish up a notch.

Serving Suggestions

How Do You Cut Cabbage Into Wedges?

To cut cabbage into wedges, follow these simple steps:

Remove Outer Leaves: Start by removing any damaged or wilted outer leaves from the head of cabbage. Peel off and discard these leaves until you reach the fresher, firmer leaves underneath.
Trim the Stem: Place the cabbage head on a cutting board with the stem facing down. Use a sharp knife to slice off a thin layer from the bottom of the cabbage to create a flat surface. This will help stabilize the cabbage while you cut it into wedges.
Cut in Half: Use your knife to cut the cabbage head in half vertically, from top to bottom, through the center of the stem. You should now have two equal halves.
Cut Each Half into Quarters: Take one half of the cabbage and lay it flat on the cutting board, cut side down. With your knife, slice the half cabbage into two quarters by cutting straight down through the stem.
Trim the Cabbage Core: Check each cabbage quarter and, if necessary, use your knife to carefully cut out the tough core at the base of each wedge. Make a diagonal cut on each side of the core to remove it completely. Keep in mind that doing this may prevent your wedge from staying intact. 
Cut into Wedges: With each cabbage quarter still lying flat on the cutting board, slice it lengthwise into wedges. You can cut each quarter into two or three wedges, depending on the size of the cabbage and your preference. Aim for evenly sized wedges to ensure even cooking.
Repeat: Repeat the process with the other half of the cabbage until you have cut the entire head into wedges.
