With just a handful of easy to find, everyday ingredients, these simple no-bake creamy Pumpkin Pie Yogurt Parfaits mix together in minutes for a refreshingly easy dessert. Packed with good for you pumpkin puree and plain Greek yogurt, it makes an equally satisfying breakfast – dare I say just a good as pumpkin pie, but with much less sugar and fat!

Parfait Ingredients

¾ cup canned pumpkin puree (not pumpkin pie filling)
½ cup plain nonfat Greek yogurt
½ cup light whipped topping
2 packets 0 calorie sweetener
1 teaspoon vanilla
¾ teaspoon ground cinnamon
¼ teaspoon pumpkin pie spice
Pinch of salt
1-2 cinnamon grahmam crackers, crumbled into chunks

Step 1: Gather and prepare all ingredients.

Ready to make pumpkin parfaits

Step 2: In a medium mixing bowl, stir together the pumpkin puree, yogurt, light whipped topping, sweetener, vanilla, cinnamon, pumpkin pie spice and salt until thoroughly combined.

Combine all the ingredients, except for the graham crackers, in a mixing bowl

Step 3: Divide the mixture evenly between two glasses, layering the pumpkin yogurt mixture with a layer or two of crushed graham crackers, to make parfaits. Top with any remaining graham cracker pieces.

Recipe Notes

I’m using McCormick’s Pumpkin Pie Spice which consists of cinnamon, ginger, nutmeg and allspice.

As an alternative to cinnamon graham crackers, trying layering your parfaits with ¼-cup cinnamon or pumpkin pie granola. Or make your own Skinny Pumpkin Granola.
