The Benefits of Weekly Meal Planning

Getting dinner on the table is so much easier when you’ve planned what you’re cooking and eating ahead of time and done the grocery shopping. It’s the only thing that prevents me from resorting to fast food or takeout more often than I should.

Every time I get out of the meal planning habit and resort to take-out, restaurants, and snacking on junk, it’s amazing how crappy I feel and how quickly the pounds pack on.

The Key to Eating Well is Cooking

When you’re trying to eat well, not cooking isn’t an option. At least for me anyway. There are just too many unknowns (hidden sugar, flour, fats, chemicals, points), too many temptations, and portions are way too large for you to routinely eat well on take-out or pre-made food.

The Key to Consistent Cooking is Planning

In the beginning meal planning can be a huge chore. The key is finding an approach that works for you over the long haul. If you are struggling with meal planning here are 3 great meal planning resources to help:

A delicious one-pan meal, this chicken and mushroom stir fry comes together in less than 30 minutes. Quicker than you can grab takeout from your favorite Chinese restaurant.

Greek Frittata with Spinach and Feta

Greek Frittata – As soon as I saw this recipe for a Greek Frittata with Spinach and Feta I knew I had to make it. The combination of flavors is a winner! If you’ve never had a frittata before, it’s just an open-faced omelet. I’ll serve it with a simple mixed green salad.

Crock Pot Salmon and Veggies

Slow Cooker Salmon and Asian Vegetables for Two – I love that this is a recipe that only serves two (affiliate link) and can be made in a 1.5- to 3-Quart slow cooker (affiliate link). It can also be easily doubled and cooked in a 3- to 4-Quart slow cooker (affiliate link).

It comes together in minutes—just dump in a bag of frozen vegetables, place your salmon on top, season with salt and pepper and pour in a simple sauce, cover and cook. And it takes only 2-3 hours on LOW, which works well for me because I work mostly from home. I’ll serve it with a small portion of steamed brown rice. If you are keeping things low carb, cauliflower rice would work.

Corned Beef and Cabbage – For many of us, it wouldn’t be St. Patrick’s Day without indulging in a plate of corned beef and cabbage. It certainly wouldn’t for me.

Leftover Corned Beef and Cabbage Soup – I love using the leftovers from our St. Patrick’s Day corned beef and cabbage dinner to make this skinny leftover corned beef cabbage soup. I get such a kick out of turning leftovers into soup; transforming them into a completely different meal. There’s something so satisfying and frugal about it.

I’ll also make one of these variations of soda bread to enjoy alongside.
